Dinner Recipe: Fajitas

Well this is not an Original recipe, as seen previously on the blog, but is one that is such a staple in my life that I had to share it! Fajitas allows for a great dinner for a whole family or just two! This makes for a great opportunity to mix it up a bit if your in the typical, Pasta, eat out, pasta routine. It allows your creativity to run wild and add lot's of different tasty ingredients that are often fun to shop for and find in the local Albertsons. Before we dive into the recipe, let me explain that we do use some assistance from the folks over at McCormick's for the awesome Fajitas Mix! I couldn't do it without them!!!

First, let's list the ingredients so you know what to shop for:

  • 1 Package McCormick Seasoning Mix
  • Canola Oil
  • Boneless beef sirloin, cut into 1/2 inch strips (chicken can be used instead if desired)
  • 1 Onion, Cut into strips or squares. 
  • 2 Bell Peppers (two different colors to mix it up)
  • Tortillas
  • Cheese (shredded)
  • Salsa
  • Sour Cream (100% Optional, totally not necessary)
  • Avacados
  • Sliced Tomatoes
  • 1 Can of Corn
  • Black Beans
  • Creative toppings of your choice - Include in comments!
Now that we have the ingredients, let's head over the the kitchen. Heat up the griddle with 1 table spoon of oil and fry up the meat that is cut into strips.
While the meat is cooking, Cut the onion and bell peppers.

Once the meat is cooked to your prefection, toss it into a safe location, keeping any juices in the pan. Add the cut onion and bell peppers to the frying pan with an additional tablespoon of oil added to the pan.
In the mean time, while this is saute'ing and making the house smell nicely, you can begin putting together the toppings. This includes: Shredding cheese, heating up beans and heating up corn.

 

When you feel like you finally have caught up on the cooking, it would be a great time to start working on the Guac-sauce. This can be fun to make with little kids since it is bound to get messy! Load up those Avocados in a bowl and smash them together until the big clumps are gone.

                            

You might be starting to get hungry now, so just grab a warm tortilla and load it up with the Fajita goodness you have just created!
